Ultimate Breakfast Burrito Recipe

These crispy, cheesy, customisable breakfast burritos with eggs, sausage, and avocado have homemade hash browns for crunch.


2 tablespoons vegetable oil, divided 1 ¼ cups shredded Yukon potatoes ¾ teaspoon salt, divided ½ teaspoon black pepper, divided ¼ cup chopped yellow onion 8 ounces ground sausage 4 eggs 2 large tortillas ½ cup shredded cheddar cheese 2 tablespoons chopped green onion ½ avocado, thinly sliced



Heat 1 tablespoon vegetable oil in a large skillet on medium. Combine potatoes, ½ teaspoon salt, and ¼ teaspoon black pepper; cook for 10 minutes, stirring periodically, until golden brown. Set aside on a platter.


Add the chopped onion and remaining 1 tablespoon vegetable oil to the skillet. For 2-3 minutes, softly golden. Stir in sausage for 8 more minutes until browned. Reserve mixture on a dish.  


Stir in eggs, ¼ teaspoon salt, and ¼ teaspoon black pepper in the skillet. Scramble with a rubber spatula for 2 minutes until set. Set aside on a platter.  


Heat each tortilla in the skillet for 10-15 seconds on each side. Spread cooked potatoes, sausage, onion, and eggs in each tortilla's centre.


Add avocado slices, chopped green onion, and cheddar cheese. Wrap burritos tightly.   


Put burritos seam-side down in a heated skillet for 15 seconds to brown. Reverse and brown. Serve heated with your favourite sauce.
