The Best Banana Cupcakes Recipe

A quick to make, these banana cupcakes with tangy cream cheese frosting are airy and delicious. Family will go crazy for them!  

– 1 cup plus 2 tablespoons cake flour – ½ teaspoon baking powder – ½ teaspoon baking soda – ¼ teaspoon fine salt – 1 teaspoon ground cinnamon – ½ cup unsalted butter softened – ¼ cup granulated sugar – ¼ cup light brown sugar – ¼ cup sour cream – 2 teaspoons vanilla extract – 2 large egg – 2 large ripe bananas peeled, and mashed – Cream cheese frosting for topping – Chopped pecans for garnish

INGREDIENTS 

Preheat oven to 350°F. Paper-line a 12-cup muffin pan. Mix cake flour, baking powder, baking soda, salt, and cinnamon in a medium basin.  

INSTRUCTIONS

Step 1

Beat the butter and sugars on medium speed in a stand mixer with the paddle attachment or a large bowl with an electric mixer for 4 minutes until light and fluffy.  

Step 2

Sour cream, vanilla, and eggs should be mixed together. Mix the flour mixture into the butter mixture until barely incorporated.  

Step 3

To avoid overmixing, gently fold in the mashed bananas. Divide batter between muffin cups using a large cookie scoop (3 teaspoons).  

Step 4

Bake cupcakes in preheated oven for 18–20 minutes until tops are golden brown and toothpick inserted in centre comes out clean.  

Step 5

Completely chill cupcakes before icing. Chop pecans for garnish.
