Eggplant Milanese ~ Italian Fried Eggplant Cutlets Recipe

Italian Fried Eggplant Cutlets (Eggplant Milanese) are crispy outside, tender within, and flavorful! Thin eggplant slices are dipped in egg, then handmade, cheesy, seasoned breadcrumbs, and gently fried until crispy.  


– pounds eggplant (approximately) – 3 large egg – ¼ cup whole milk – 3 cups Seasoned Breadcrumbs  – Olive or other oil as needed for frying – Salt, for finishing For Seasoned Breadcrumbs: – 2 cups plain breadcrumbs (fine texture) – 1 cup grated Pecorino Romano cheese – 2 Tbsp dried oregano – 2 Tbsp dried basil – 2 Tbsp garlic powder – 2 Tbsp onion powder – 2 tsp ground black pepper

Prepare and gather ingredients as directed. Mix all the ingredients in a large bowl to make seasoned breadcrumbs. Prepare hours or days ahead and chill in an airtight bag or container.

To peel eggplants, cut the thick stem. Carefully slice eggplant into ⅜" thick slices. Mix eggs and milk in a large bowl. Raw eggplant slices, egg mixture, seasoned breadcrumbs, and sheet pan should be lined up for a breading station.   

Step 2

Coat each eggplant slice in the egg mixture with your hand or a fork/tongs, then pat it into the breadcrumbs to adhere, then place on a sheet pan. Repeat for all eggplant pieces.   

Step 3

Simplify by using one hand for the wet egg mixture and the other for the dry breadcrumb mixture. Add enough oil to a large skillet to cover the bottom by ½”. Use medium heat to bubble oil around a wooden spoon.   

Step 4

Before the pan is heated, breaded eggplant will absorb too much oil and get soggy. To remove breadcrumbs, lightly shake each eggplant piece. Take care not to crowd the pan as you add each eggplant piece to the heated oil.   

Step 5

Fry what fits in one layer. Fry eggplant till golden brown, then flip and fry again. Each side will take 2–3 minutes. Fry in batches with oil as needed.  

Step 6

Transfer fried eggplant slices to a sheet pan rack after browning. This keeps eggplant cutlets crisp instead of paper towels. If desired, gently salt fried eggplant.
