Easy Hash Brown Breakfast Casserole Recipe

Hash Brown Breakfast Casserole makes a delicious holiday breakfast. For easy crowd feeding, prepare it the night before and bake it in the morning.  

– 1 pound breakfast sausage – 12 egg – 1 cup whole milk – 6-8 ounces smoked diced ham – 30 ounces frozen shredded hash brown – 1 red bell pepper diced – 1 green bell pepper diced – 1 medium red onion diced – 4 cloves garlic minced – 6-8 ounces shredded cheddar cheese – ½ teaspoon paprika – ½ teaspoon dried sage optional – 1 teaspoon fine sea salt – 1 teaspoon ground black pepper


With a little salt and pepper, brown the sausage in a pan. After cooking, put it somewhere to cool.  


Step 1

Add the eggs, milk, a teaspoon of salt, and pepper to a big bowl. Use a whisk to mix the ingredients completely so that there are no streaks.   

Step 2

Put in the sausage that has been cooked, ham, hash browns, bell peppers, onion, garlic, cheese, and spices. Use a stir to mix.   

Step 3

Put the mixture into a 9x13-inch baking dish that has been greased and cover it. Put it in the fridge for at least two hours, but better overnight.  

Step 4

Put it in an oven set to 375°F and bake for about an hour, until the top is golden brown and the eggs are set in the middle.
