Easy Banana Oatmeal Cookies Recipe

Chocolate-studded banana oatmeal cookies are moist and chewy. Serve them for dessert or brunch with your favourite coffee!  

– ½ cup unsalted butter at room temperature – 1 cup packed light brown sugar – 1 large egg – ¾ cup mashed ripe bananas about 2 medium – 1 ½ teaspoons pure vanilla extract – 1 cup all-purpose flour – 1 teaspoon baking soda – 1 teaspoon salt – 2 teaspoons ground cinnamon – 3 ¼ cups old fashioned oat – 1 cup semi-sweet chocolate chip


Preheat oven to 350°F. Prep baking sheets with parchment. In a stand mixer with the paddle attachment or a big basin with an electric mixer, beat butter and sugar for 3 minutes.  


Step 1

Scrape the bowl and fully combine the egg. Add vanilla and mashed bananas after scraping the bowl.  

Step 2

In a larger bowl, combine flour, baking soda, salt, and cinnamon.Whisk flour mixture into banana mixture slowly until just combined.  

Step 3

Whisk and scrape bowl sides.Stir in oats and chocolate chips. With a medium cookie scoop (1.5 tablespoons), scoop dough onto prepared cookie sheets, leaving 2 inches between cookies.   

Step 4

Wet the bottom of a drinking glass and carefully push the cookie tops to avoid sticking. Tops should be dry and edges brown after 11-13 minutes in preheated oven.  

Step 5

Let banana oatmeal cookies cool on the baking pans for 5 minutes before transferring to a wire rack.
