Easy Apple Cinnamon Pancakes Recipe

For a really fancy breakfast, you can top fluffy apple cinnamon pancakes with fried apples and apple cider syrup.

For the pancakes: – 1 1/4 cups flour – 2 Tablespoons sugar – 1/2 teaspoon salt – 1 teaspoon baking soda – 1 teaspoon baking powder – ½ teaspoon cinnamon – 1 egg, separated – 4 Tablespoons butter, melted and cooled – 1 cup buttermilk – 1/4 cup milk – Canola oil For the apples: – 1 lb. apples (3-4 medium apples), peeled and chopped into bite size chunk – Squeeze of lemon juice – 2 Tablespoons brown sugar – ½ teaspoon cinnamon – 1 Tablespoon butter – Pinch salt – Apple cider syrup, for serving


Make pancakes first. Mix flour, sugar, salt, soda, and baking powder in a medium bowl.


Step 1

In another bowl, mix egg yolk, butter, buttermilk, and milk.Gently whisk yolk mixture into dry ingredients.

Step 2

Egg white should be fork-whipped and carefully added to batter. Stop before batter smooths! Bumps in pancake batter are great!

Step 3

Heat a large non-stick pan or electric griddle to 375 degrees or medium. Pour half-cups mixture onto hot pan.  Pancakes should bounce. 

Step 4

Pancake flip and heat 2-3 minutes till bubbles pop and golden. 200-degree oven one-layer pancakes.

Step 5

Meanwhile, sauté apples. Combine apple chunks, lemon juice, sweeteners, cinnamon, and salt.

Step 6

HEAT butter in a large cast iron skillet or pan on high. Heat half the apple mixture until bottom browned without stirring. 

Step 7

Stir and simmer 5–6 minutes until sugar caramelizes and apples are tender but not mushy. Serve apples and maple or cider syrup on hot pancakes.
