Delicious Homemade Funfetti Cupcakes Recipe

Delicious homemade Funfetti Cupcakes are easy to make and wonderful for any occasion. Simple sprinkle colour changes may dress up these cuties for any festival or party!  

– 2 ¼ cups cake flour I used Swan’s Down brand – 2 teaspoons baking powder – ½ teaspoon kosher salt – 1 ¼ cups whole milk room temperature – 2 teaspoons pure vanilla extract – 12 tablespoons unsalted butter at room temperature – 1 ½ cups sugar – 4 large egg whites room temperature – ½ cup sprinkle


Middle rack, 350°F oven. Two normal cupcake pans need liners. Sift flour, baking powder, and salt into a large bowl.  Pour milk and vanilla into a measuring cup.  


Step 1

Beat butter and sugar in a stand mixer with the paddle attachment or by hand for 3 minutes at medium speed until light and fluffy. Slowly add 1/3 flour mix.   

Step 2

Beat half the milk mixture and half the dry ingredients until combined. Whisk in the remaining milk until smooth, then add the last dry ingredients and mix.  

Step 3

Mix egg whites in a medium basin with a hand mixer on medium-high speed until stiff peaks form.   

Step 4

Gently mix ¼ of beaten egg whites into cupcake batter with a rubber spatula until no streaks remain. This lightens batter.   

Step 5

Cut the spatula from middle to bottom of the bowl and gently fold in the remaining whipped egg whites half at a time. Keep tilting bowl 90 degrees to remove egg white streaks.  

Step 6

Fold sprinkles into batter gently. Pour batter into 24 muffin wells, filling each 2/3 full with a large scoop or ¼-cup measure.  

Step 7

Bake until a toothpick inserted into the centres comes out clean, 18–24 minutes. Frost and decorate with buttercream after cooling on a wire rack.
