Delicious Cheesy One Pot Lasagna Recipe

This one pot lasagna has all the flavors of a regular lasagna but only takes half the time to make. It's meaty, cheesy, and saucy.

– 1 Tablespoon olive oil – 1 medium yellow onion, chopped – 1/2 lb. ground beef, chuck, or sirloin – 1/2 lb. Italian sausage – 3 garlic cloves, minced – 1 teaspoon Kosher salt – ½ teaspoon black pepper – 10 curly edged lasagna noodles, broken into 2 inch length – 1 (14 oz) can diced tomatoes with their juice – 1 (24 oz) can marinara or spaghetti sauce – 1 cup water – 1 teaspoon oregano – 2 teaspoons basil – 1 cup cottage cheese – ½ cup Parmesan cheese – 1 ½ cups fresh spinach – 8 ounces fresh mozzarella cheese, sliced


In a large oven-safe skillet, heat oil on medium. Add onion and cook 2-3 minutes. Slide the onion to the side of the pan and evenly distribute ground beef and Italian sausage. 


Step 1

 Flip and stir onions after 3 minutes of browning. Continue cooking until beef or sausage is no longer pink, 3–4 minutes.

Step 2

Add garlic and cook 30 seconds. Season beef with salt and pepper. Remove over a tablespoon of fat before continuing.

Step 3

Cover beef with noodles. Do not stir. Add pasta sauce, water, and diced tomatoes. Season with basil and oregano. Medium-high covered boil.

Step 4

After boiling, uncover, whisk, and reduce heat to medium-low. Stir and scrape the pan as you simmer for 15 minutes. Combine cottage cheese, spinach, and Parmesan.

Step 5

Heat broiler. Evenly distribute mozzarella slices on the dish. Let mozzarella melt and brown in 4-6 minutes on broil. Place fresh basil on top after baking.
