Clams Posillipo in Red Sauce Recipe

Quick and simple Clams Red Posillipo tastes salty and flavourful like shellfish! Fresh clams stew in a light tomato-white wine sauce with anchovy, parsley, and lots of garlic. A delicious restaurant-style dinner may be made at home in 30 minutes.  

INGREDIENTS

– 2 dozen clams (top neck or littleneck are best), purged – ¼ cup fine salt – ¼ cup extra virgin olive oil – 2 Tbsp chopped or thinly sliced garlic (use more or less, as desired) – 3-4 anchovy filet – Pinch crushed red pepper – 1 cup dry white wine such as pinot grigio – 1 (28-ounce) can whole tomatoes, crushed by hand – ⅓ cup chopped flat-leaf parsley leaves, divided – Pinch salt and black pepper

To remove sand, brush clams. Combine ¼ cup salt and 3-4 quarts cold water in a big dish. Carefully submerge clams in cold water for 1-2 hours. Refrigerate the basin or ice the water.

Carefully drain and rinse clams. If water is very foggy, repeat until clear. Clams should be rinsed after purging. Keep them in an ice-filled colander in the fridge until cooking.  

Step 2

Prepare all ingredients as instructed. Cook olive oil, garlic, anchovies, and crushed red pepper in a large skillet over medium-low heat for 4–5 minutes until garlic softens and browns and anchovies dissolve.  

Step 3

Mix wine and brown pieces in pan. Add tomatoes, half the parsley, salt, and black pepper. Clams salt. Simmer tomato mixture uncovered for 10 minutes to thicken and remove alcohol.  

Step 4

Add cleaned clams to boiling tomato sauce carefully. Gentle stir to distribute in pan. Cover, reduce heat to medium-low, and stir occasionally while steaming.  

Step 5

Clams cook open! Close each clam in a bowl after cooking/opening. Throw away unopened clams. It may take 10 minutes to boil all the clams.  

Step 6

Stir the tomato sauce into the clams in the pan or pour it over them in a bowl after cooking.  

Step 7

Sprinkle with remaining chopped parsley and serve immediately with crusty bread to soak up the sauce and juices! In the pot or skillet, serve clams family-style for fun and participation. Use a little shell bowl. Happy eating!
