Best Strawberry Oatmeal Bars Recipe

Strawberry muesli bars are a tasty way to welcome berry season. They have a simple crust made of oats and jam made from fresh strawberries.  

For the Filling: – 4 cups whole strawberries washed, hulled and diced – ⅔ cup granulated sugar – Juice from half of a lemon about 1 ½ tablespoon – ⅓ cup corn starch For the Crust/topping: – 2 cups old fashioned rolled oat – 2 cups all-purpose flour – ⅔ cup granulated sugar – 1 ½ teaspoons cinnamon – 14 tablespoons unsalted butter room temperature – ½ teaspoon salt – 1 teaspoon pure vanilla extract


Warm the oven up to 350°F. Spray nonstick spray on a 9x13-inch baking pan and set it away.  


Step 1

Mix sugar and diced strawberries in a large bowl. Rest 10 minutes. Stir in lemon juice and cornflour after 10 minutes.  

Step 2

Mix oats, flour, sugar, cinnamon, butter, salt, and vanilla in a stand mixer on low speed until the butter is equally distributed and the texture resembles coarse meal.  

Step 3

Firmly press 2/3 of the crust ingredients onto the pan bottom with your hands or a measuring cup or glass. Strawberry filling should cover the crust evenly.   

Step 4

Sprinkle the leftover crust mixture over the strawberry filling, clumping some to make a crumb-like topping.  

Step 5

Bake bars till golden brown, 35-40 minutes. Cool fully before cutting.
