These nachos have a tonne of cheese, pepperoni, Italian sausage and the best homemade alfredo sauce. When serving a big group of people, classic nachos are the ideal appetiser. An incredible new take on a classic Mexican restaurant favourite is this Italian rendition. Johny Carino’s, an ancient Chicago restaurant, is where the concept for Italian nachos originated. Though I must admit that I really like the concept, I do have a few additions to make!

My take on nachos is to top crunchy crostini with a creamy alfredo sauce and Italian sausage, rather than the usual tortilla chips and other toppings. To create an incomparable flavour combination, we will then stack on some of our favourite Italian cheeses and vegetables.



  • 24 slices Crostini bread
  • 4 links Italian Sausage casing removed
  • ¼ cup Butter
  • ½ cup Heavy Cream
  • ¾ cup Parmesan Cheese grated, divided
  • ¾ cups Ripe Black Olives
  • ¾ cups Pepperoni sliced
  • ¾ cup Roasted Tomatoes in oil drained
  • ¾ cup Pepperoncini or Banana Peppers sliced
  • ¾ cup Fontina shredded
  • ¾ cup Mozzarella shreded



Alfredo Sauce

In a small saucepan over medium heat, melt the butter and mix in the heavy cream. Next, add the ½ cup of parmesan cheese and stir over low heat. Take off the heat and place aside.


Assemble the Nachos

After removing the casings, fry the sausage over medium-high heat, breaking it up as it cooks. Using a slotted spoon, remove the sausage from the pan and place it on a plate covered with paper towels to drain.

In a medium bowl, mix the remaining ¼ cup of parmesan cheese, fontina, and mozzarella.


Turn the oven on to broil.

Place the crostini on a cookie sheet in a single layer. Arrange the Italian sausage evenly on top of the crostini, then sprinkle with the alfredo sauce.


Layer the other ingredients one more time, completing with the mozzarella cheese combination.

Just until the cheese melts, around two to three minutes, place the nachos under the grill. Serve right away.
