Delicious Cadbury Egg Cookies Recipe – Learn like a Pro

  • 300 g of plain flour
  • 120 g of unsalted butter melted
  • 200 g of light brown sugar
  • 100 g of caster sugar
  • 1 large egg
  • 1/2 teaspoon of bicarbonate of soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla essence
  • 80 g of milk chocolate chips
  • 180 g of Cadbury’s Mini Eggs extra for decorating

In batches of ten seconds, melt the butter in a basin or jug in the microwave. Because it will sputter, cover it.

Slice half of the Mini Eggs very thinly, leaving the other half whole.

Melted butter, brown sugar, and caster sugar should be combined in a large mixing basin and beaten for about five minutes, using a hand mixer or cake mixer, until light and fluffy.

Once the mixture is smooth, add the egg and vanilla essence.

Next, incorporate the flour, baking powder, bicarbonate of soda, and salt. To make a cookie dough, thoroughly mix. Now it will be pretty stiff.

To ensure that the chocolate chips and Mini Eggs are uniformly distributed throughout the dough, add them both and mix well.

Scoop out the cookie dough with a tablespoon, then carefully form it into uniform balls with your palms.

After placing them on a level baking surface, place them in the refrigerator or freezer for one hour or twenty minutes, or until they solidify.

Adjust oven temperature to 180°C.

After the dough has chilled, place the balls evenly apart on a baking pan that has been prepared.

The cookies will stretch out a lot, so you might need to make these in batches. In order to avoid their joining, try not to place them too near together.

Remove from the oven after 12 minutes of baking, when they are starting to become golden. After allowing the cookies to cool and solidify a little, carefully move them to a wire rack to finish cooling.

Present and savor!

Will these Mini Egg cookies keep well?

Even we wouldn’t be able to finish all of these in one sitting, even though they are best enjoyed freshly baked. These Easter cookies keep well for three to four days when stored in an airtight container.

Can I use an alternative chocolate egg?

Of course! There are so many exquisite chocolate eggs available; a few of my favorites are as follows:

  • Enchanted golden eggs
  • Aero milk chocolate eggs
  • Daim little eggs

But you can add anything you like to the basic cookie dough mixture in this recipe. Add chocolate chips, a mixture of milk and dark chocolate, or even white chocolate, if that’s all you want. You might also use popping candies or chocolate buttons. You could even add chopped raisins or walnuts, if you’d like. The options are unlimited; have fun experimenting!
